13 - 1 ounce dark chocolate shavings

# Directions:

01 - Line the bottom of a 9-inch springform pan with parchment paper.
02 - Process digestive biscuits into fine crumbs using a food processor. Combine with melted butter until thoroughly mixed. Press evenly into the prepared pan and chill for 20 minutes.
03 - Gently heat heavy cream in a small saucepan until steaming but not boiling. Pour over chopped chocolate, allow to rest for 2 minutes, add butter, and mix until smooth. Spread ganache evenly over the chilled biscuit base. Refrigerate for 20 minutes until slightly set.
04 - Beat mascarpone, heavy cream, powdered sugar, and vanilla extract together in a mixing bowl until smooth and thick. Gently spread the vanilla layer over the set ganache. Chill for at least 1 hour.
05 - Toss mixed berries with sugar and lemon juice in a bowl. Arrange fruit evenly over the vanilla cream layer.
06 - Garnish with dark chocolate shavings and fresh mint leaves if desired. Release the dessert from the pan and slice with a sharp knife for serving.
