01 - Rinse scallops under cold water and pat thoroughly dry with paper towels. Remove the tough side muscle if present.
02 - Whisk together olive oil, lemon juice, garlic, parsley, salt, and black pepper in a mixing bowl until combined.
03 - Add scallops to the bowl and gently toss to coat. Let marinate for 5 minutes at room temperature.
04 - Preheat grill to high heat and lightly oil the grates to prevent sticking.
05 - Place scallops on grill, leaving space between each. Grill for 2-3 minutes per side, turning once, until opaque and golden-brown crust forms.
06 - Remove from grill and transfer to serving platter. Garnish with lemon wedges and extra parsley if desired. Serve immediately.
